Nestled in the foothills of the Taygetos Mountains in the Peloponnese, our family grove benefits from a unique high‑elevation climate that allows Athinolia olives to ripen slowly, developing concentrated flavor and natural freshness. Cold‑pressed within hours of harvest, they retain their naturally low acidity and produce an oil with vibrant aroma, elegant balance, and Ygeia’s signature peppery finish.
